One of my favorite things to eat ever is breakfast. It is one of my favorite meals and I could eat it any time of the day. Actually, I have to eat breakfast everyday, even if it’s just a piece of bread. The other day I didn’t have too much in my fridge except for breakfast food, so I made one of my favorite meals for dinner.

I made my mom’s special breakfast sandwich, we call it a Barbara McMuffin, since it’s like McDonald’s but better. It is an English Muffin with American Cheese, Ham and a fried egg. I usually use White American Cheese, not sure why but I prefer it to the yellow. It’s also good with scrambled eggs. Really you can make edits to it however you want. What I do is toast the English Muffin, then retoast it with the cheese (in a toaster oven or the regular oven) to melt the cheese. I fry the ham up so that it gets warm and a bit crispy. Then I cook the egg. Put the sandwich together, add some salt and pepper and voila! Deliciousness.

Since 1 sandwich doesn’t really fill me up, especially for dinner, I served it with some asparagus with butter and breakfast potatoes. The breakfast potatoes are key. James and I have spent a lot of time perfecting our potatoes. My method to crispy potatoes: put canola oil in the pan, heat and add minced garlic, salt, pepper and herbs of your liking (i.e. rosemary, thyme, oregano, etc). Let the garlic cook for a few minutes until it’s crispy and brown. Add the potatoes (cut into small pieces). Cook, turning after a few minutes. Cover the pan and let cook longer, turning so that they get crispy on all sides. Serve.

This is a great meal overall. With the asparagus and potatoes it feels more like lunch or dinner for me. Minus the asparagus, more breakfast or brunch.
