After I was husbandless for a few nights last week, I decided to cook a romantic dinner for James and I upon his return. One of our favorite meats is lamb, we served it at our wedding; and so I decided to find a great recipe for lamb. I found this Pistachio-Crusted Rack of Lamb with Pancetta from Food & Wine. And while it sounds fancy it difficult to make, it really wasn’t.

The toughest part I’d say is wrapping the bacon around the rack of lamb so that it stays. I got it to work, so that’s all that matters, right? The combination of bacon and lamb was absolutely delicious. And by roasting the bacon it got extra crispy. As you can see in the photo above, I served it with a baked potato and asparagus, a winning combination here in our household. We paired it with a sparkling wine from California, from Iron Horse Vineyards.

Not only was the meal absolutely delicious, it was a great staying-in date night. Obviously cheaper than going out, but still, lamb isn’t a cheap cut of meat. It was a great way to celebrate being back together. Any suggestions of other “date night in” dishes? Or other ways to celebrate?
