I started my food adventure with the Baja Fish Tacos from the June issue of Food Network Magazine. Here is my final result:

The recipe calls for Halibut, but with my budget that was out of the question, so I opted for Tilapia, which is often used in fish tacos. It was an easy dish to prepare, took about 30 minutes total, as the recipe indicated. I didn’t add the salsa, the “coleslaw” and avocado was enough moisture, and flavor, to not add the tomato goodness. I’m definitely going to make it again when I want a light but filling meal, or I just miss the flavors of home.
